Well, we are almost half way through the challenge. While our goals may be different, the key that we should all be focusing on is discipline. So with that being said, how are you all doing so far? What has been the hardest part of the challenge? Any surprises?
For me, I am pleased with what I have been able to accomplish. My goals are simple. For this challenge, I wanted to stay away from junk food, cook more, eat more fruits & veggies, eat healthy snacks, drink more water and stay away from the coffee and sodas. The hardest part for me has been eating enough. I never have been a big eater. With me staying away from empty carbs and eating more healthy carbs, I find that I get hungry throughout the day thus I eat more snacks. I snack on fruit, veggies, crackers, almonds and I found these amazing frozen fruit & veggie pops that taste sooooo good. What has surprised me the most is that I don't crave coffee or candy. I loved my coffee and candy.
So as I continue the challenge, I hope to enjoy more of the recipes that I have been finding and stick to eating more colorful foods.
