Day 1 - Breakfast

I am totally not a breakfast person but with it being the most important meal of the day, I am proud to say I started this challenge off on the right foot.

For breakfast I had scrambled egg whites with spinach, onion and bell paper, topped off with an ice cold bottle of water.

1 Egg

Diced yellow onion

Diced green bell pepper

Leaves of spinach

Dash of ground pepper

Dash of sea salt

1/2 teaspoon of olive oil

I used a small dry pan and added my oil, salt and pepper.  Once heated, I threw in my diced the onion, bell paper & spinach.  I sautéed the veggies then added my egg white. 

My picture may not look pretty but the taste was on point.   Quick and easy breakfast and you can chop your veggies the night before to lesson the prep time for the next morning.
